These bars are so awesome! I bake them almost every week and freeze some of it. Every time we are heading out of the house, couple of the bars go into my bag and the kids love it. No – wait a minute, I love it! You know how hard it is… with all the vending machines on the way and sugary treats in the stores.
It’s a new “granola bar” for us here. Usually mixing whatever is in the cupboards at the moment.

2/3 cup (10 tbsp) rolled oats
1/2 cup buckwheat flour(grounded from the raw buckwheat), sometimes I use brown rice flour or coconut flour instead
1/2 chopped walnuts
1/4 cup coconut flakes unsweetened
3 tbsp chia seeds
3 tbsp mini dark chocolate chips (I have used 1 small chopped block of dark chocolate – chopped)
1/4 tsp cinnamon
1/4 tsp fine grain sea salt
3 tbsp pumpkin seeds (optional)
3/4 cup mashed ripe banana
1/2 cup natural smooth peanut butter
1/4 cup coconut nectar syrup (I have used pure maple syrup)
1 tsp pure vanilla extract
Preheat oven to 350F, line 8 inch square pan with piece of parchment paper. Have the tip of the parchment paper to stick out of the pan, spray it with olive oil.
Mix together oats, walnuts, chia seeds, buckwheat, coconut flakes, chocolate chip, cinnamon and salt. In a different bowl mash banana and stir in the peanut butter with maple syrup and vanilla extract. Add the dry ingredients to the wet once, mix well and spread it on the parchment paper. I usually wet my hands to make it even on top and shape in into the pan evenly.
Bake for 25 minutes, remove from the oven and let it cool completely before slicing the bars.
