For our New Years celebration I have decided to make Coconut Bars from a blog “Oh She Glows”, instead of our traditional creamy cake. The recipe is amazing, it replaces all the dairy and the white sugar with natural coconut milk, coconut oil and coconut sugar.
It was one of our main desert for the night! So very good!
Preheat the oven to 350F.
I didn’t have the 9-inch square pan, but it worked out great with my 9-inch round pan(with removable bottom).
First prepare the condensed coconut milk. In the pot whisk together 1 can coconut milk, 2/3 coconut sugar. After bringing it to a simmer, reduced the heat to low-medium. Simmer for around 35 minutes. Whisking the mixture time to time.
While it is cooking, prepared the graham cracker crust by mixing the 2 cups of graham cracker crumbs with 6 tbsp softened coconut oil. Then press the mixture into the prepared 9-inch pan firmly.
Pour warm condensed milk over the graham crust. Next, sprinkle it with 3/4 cup of chocolate chips, 1 cup of unsweetened shredded coconut, and with 3/4 cup of chopped pecans. Press the mixture down with your hands and sprinkle with the pinch of sea salt.
After baking it for 30 minutes, let it cool down for about 30 minutes, before putting it in the fridge for 4 hours. Make sure to chill before cutting it into bars, or the bars will fall apart.
