After my morning Pilates workouts, I sometimes eat a Larabars to get some energy into me until it is a lunch time. My favourite flavoures are the coconut and a peantubutter bars.
Last week I came across this recipe for Dark Chocolate Cherry Energy Bites. Which are even better, because once you get the idea of how to make them yourself, the variety is unlimited!!!
Next time I am going to add toasted coconut, maybe less dried cherries (it felt too sweet for me).
1 cup of raw almonds
8 pitted dates (I buy the once by Medjool)
1/2 cup dried sweetened cherries (I have used 1/4 cup the second time)
3 tablespoons of dark or semi-sweet chocolate chips
1/4 raw pecans
sea salt to taste
Process the almonds in the food processor. Remove 1/3 cup of the almonds aside.
Add pitted dates to the remaining almonds in the food processor and combine.
Add chocolate chips and pecan until they are just chopped. Add the salt to taste.
Then form the small balls and keep them in the plastic bag or container in the refrigerator.
Ta-da! Highly recommended!
