Here is one of the breakfast recipes that I have adapted into my healthy lifestyle recently – Protein Pancake!!!
I prefer it freshly made, it takes only 10 minutes to making the morning. But sometimes when I have a busy week, I will make them on the weekend and freeze it in the zip bag or a plastic container.
Do I eat it all the time? Nope, maybe two times a week. It’s great source of protein in the morning after my workouts, I have it with a cup of organic blueberries, topped with unsweetened coconut flakes! Amazing!
Sometimes I feel like topping the pancake with 2 tablespoons of Plain Liberete Organic Yogurt and cinnamon! Can’t go wrong here either.
1 scoop of protein powder (note: I prefer the Organic Brown Rice Protein Powder >>Non-GMO and Hypoallergenic<< doesn’t give me the bloating like the Whey ones do, which are harder for some people to digest.)
2 tsp. cinnamon
1 tbs ground flaxseed (note: fresh ground your flaxseed before use, so it won’t loose it’s great benefits of high fiber and Omega-3 Fatty Acids)
1/2 banana mashed with fork and added after mixing the previous ingredients together.
1/2 cup up to a cup of fresh blueberries, or defrosted once from the freezer. (mine are :-)) Don’t forget the coconut flakes or add into the pancake mixture, I do both.
Heat the pan, and season it with virgin coconut oil. Cook one side until there are little bubbles and flip it over to the other side. Top with the toppings. And we are good to go!
I know I am hooked on this breakfast! But it does takes some time of practicing and finding your own good consistency for pancakes not to break apart in the pan (depends on the protein powder, because they are not all the same) .
