Weekly favourite recipe I love to make for my boys, is the turkey meatballs! There is an incredible amount of veggies that could be added to the recipe, not even noticed by the picky eaters, and totally possible to make it gluten-free, ta-da! The meatballs make great school lunches or a quick family dinner idea.

Turkey Meatballs Gluten-Free

Ingredients
- 2 pounds, ground lean turkey
- 2 medium carrots, peeled & chopped
- 1 medium yellow onion, chopped in 4 pieces
- 2 cloves of garlic
- 4 cremini mushroms
- 1/4 cup filtered water
- 2 large, free range eggs
- 1/3 cup of brown rice flour
- 2 tsp, salt
- 1/4 tsp, ground black pepper, cumin, paprika
- 1 cup grounded rolled oats for dipping the meat balls or substitute with gluten-free bread crumbs
Instructions
- Preheat the oven to 400° F.
- Place cut carrots, onion, garlic, mushrooms in food processor to puree until reached the consistency you desire.
- Mix together ground turkey, puréed vegetables, eggs, brown rice flour, salt, garlic and spices.
- Make small 1" to 2" balls, dip each ball in the grounded rolled oats and bake for about 15 minutes until no longer pink in the centre.
Notes
- Serve with brown rice, cucumbers and steamed asparagus.
